Here is the recipe, sweet and simple I did ours in a dutch oven. Spray the d. oven with whatever Wash hte pheasnant put salt and peppr on both sides Put a thermometerin Cover Roast 1 hour at 250ยบ
I suppose they serve it in the rest. with a glass cover over it to cut at the table.......
why don't you take 1 or 2 roasts & make your own sausage? MY DH, my dad & BIL made some one time with some of dad's friends. the only problem would be stuffing it in casings--and perhpas you could even have that done for you-- or just freeze it in one pound pkgs and then make paddies out of it when you cook it??/
I just might try that sometime, for we always make our own pork sausage too. Do you have a recipe I could try?

A lady brought some deer jerky to work last year. It was ok. She made her sausage too spicey for me. She said you have too or it will be too greasy. I thought deer meat was supposed to be less greasy.
i don't think it stinks dodge. i do think it is dry and can taste "gamey" if it isn't fixed right. but lots of people put too much spice/pepper in things these days. i like mild deer sausage, good stuff!
Well lets say it has a wild game odor........we didnt care for it . Everyone seems to give it all away around here.......Deer are plentiful.
I have a sensitive sense of smell....I can pick up everything......I sneeze all the time if someone has on perfume or after shave, or smelly stuff in the wash . I buy everything unscented....... I cant wear makeup cause it turns my face into a patch of itcy rash.

I can see if my dad can get you a recipe, if you would like. BUT as long as you have garlic in your sausage recipe i see no reason why you could not try it. BUT I will talk to dad tomorrow & see if he can even get one. I will let you know either way.
barb: about the smell--I guess either i do not notice, or my deer meat has never smelled bad--as a matter of fact it has not smelled at all that I can remember.--BUT I never eat just plainly cooked deer, either-yuck!!!-that flavor is too strong for me. Cooking deer in Tomatoes or with garlic is like putting garlic in the oil that you fry squirrel or rabbit in. it just takes out the "Gamey/wild" taste. You do not really taste the garlic. It just makes it taste like a stronger flavored beef.

we use garlic and vinegar here for the gamey taste. and i guess the reason i've never really "smelled" it is because i was taught to soak it in ice water (momma always put a splash of vinegar in it, i don't) and that drains it some. scott's hunting buddy soaks his in ice/ice water for 2 days before he packages it.
i will say that a deer that is taken by still hunting does taste better than one run with dogs. i don't like or approve of dog hunting for deer.
I know just what you mean, Loz--my sister fixed a big roast back in the day for my nephew's christening dinner--she made it like you would a beef roast--it smelled terriable and one could hardly eat it. nasty.

I agree with the dogs hunting thing--
and yes we use vineger on rabbit or groundhog, but I have not tasted it used in anything else???

3 white tail were out in the back today. I keep saying how wonderful my dog Porter is. When I let him out, he watches them with me, but doesn't chase them.

i think we were just trying to talk about ways to prepare the deer to acomplish removing wild or other disagreeable tastes---an exchange of knowledge if you will------but it is so---one must eat & drink according to each persons own tastes. :wink:

I don't think deer smells any different than any other meat. Last night James cut his deer that he got last weekend. He saved some big chunks for making jerky. I have to look up some recipes because I have never made it before. We save the steaks and get the rest made into sausage.
