Lazy cook nite here.
Fresh hamburgers with melted cheese, lettuce ,tomato, onion,and sour pickle , with mayonaise on the warm bun.
Only took one to fill my gut.......

Made fresh pumpkin bars earlier, and we werent too hungry. We was eating that.

I do meal planning for two weeks at a time (and do my shopping on payday!) If it's any help this is what we're having for the next two weeks:

-Turkey Roll-ups (thick sliced deli smoked turkey with Stove Top dressing smeared on top, then rolled up, placed in the crock pot and pour a can of turkey gravy on top.)
-Fish Tacos with black beans and rice
-Sloppy Joes
-Pork Roast and roasted potatoes
-Hamburger Helper (baseball game night for my son!)
-Hot Dogs & baked beans
-Tacos with refried beans and mexican rice
-Baked Penne pasta with garlic bread and salad
-Red beans, rice and sausage with corn bread
-Burgers and tots
-Stuffed Baked potatoes
-Homemade Pizza
-Tortellini and garlic bread

The list is not in order! I usually decide what I'm going to make early in the day so I can set out meat or what not to defrost.

I'm thinking sausage roll ups. I have a ton of pancake mix left over from breakfast yesterday so I'll combine my left over sausage and hamburger. Make shapes like link sausage and then cover them in the pancake batter and then fry them on medium until done. A little sweet corn on the side and some of my chocolate cherry cake and dinner is complete. I love it when I don't have to waste my leftovers.

Good ole fashioned Ham soup from the Easter bone.
Ham bone
cabbage chopped
tators
green beans
water

Cook slowly on top for a few hours and yum yum.
No waste of bones in my house.......

tamara can I come to dinner?

I'm having soft tacos for the third night in a row. With the small amount of meat in this diet if I make up a pound of anything I'm eating it 3 or 4 times. Gets a little boring. Although I don't have to cook as often.

Next on my cooking agenda is homemade sweet and sour chicken. A friend gave me the recipe. I'm not looking forward to deboning the chicken but I am looking forward to the sweet and sour chicken. It is really good.

I made these Shaker Pork Sandwiches for dinner tonight. They were awesome. I sprinkled the meat with pepper, sage and garlic salt. Instead of baking in an oven, I tossed a mostly defrosted loin into the crockpot for 7-8 hours on low with about 2 Tablespoons of soy sauce and 1/4 cup of water. I prepped the sauce on the stove and tossed it into the crock with the pork I'd shredded. It was fantastic! Sooo good, even without the sauce. Mmmmmm, looking forward to leftovers. Served with corn on the cob, fresh salad, and some chips.

Chicken Florentine Casserole is what we had for dinner last night. Served with fresh bread and butter and corn. It was fabulous. I did find out that I really don't like canned spinach, so will use frozen next time. The kids hate spinach, I've tried dressing it up and they won't eat it. They gobbled this down and had seconds!! I was floored.

I make roast beef like that in a dutch oven.. Beef carrots peppers and tators.

sounds great Barb--tht is a mighty lot of food for a week day--does your DH know how lucky he is?

tamara: I put a chuck roast in with potatoes & carrots yesterday--used a baking bag--so easy--i just love 1 pot meals---

tonight DH took me out to eat after church--no time to eat before---DH is going hunting this next weekend so he wanted to go to church tonight instead.

but i had meatloaf, mashed potaotes, & wonderful greenbeans!!!

OH barb--my DH is not the type to go out to eat much--although his reason is the $$ and he has to get cleaned up first.

Usually we only go out to eat on Sunday for Lunch--but that is so his mom has something different to look at. (his words) I have a notion when she is gone that will stop.
but last Sunday DH mom wanted to buy our supper and it did not happen so he told her we would go out to eat on Wednesday after church--

it is nice your DH helps---mine will if I ask--but by the time I tell him what to do and how--i could of done it myself--- rolz

Yesterday was liver and onions, today will be homemade spaghetti sauce with meatballs.

We're not dress up people either, in fact DH was excited to tell me that his workplace Christmas supper was going to be held at the local Snowmobile lodge in two weeks.....meaning jeans and heavy sweaters. lol

We really like it...........But none of our relatives do.........
Can't give that away.........

I wear jeans everywhere, except to church........IT is slacks or a skirt. Church isnt the place for jean in my opinion........However lots of them do wear them..

Mark likes liver, but YUCK---can't get me to cook or eat it. I think dad told me once it was loaded with cholesterol anyway, he likes it but quit eating it.

Jeans here too, but I like to dress up sometimes just for the heck of it...Not sure about dinner tonight, Mark won't be home with mom until probably 7pm....maybe he'll bring something home with him.

I know that made your family truly happy....That was an excellent meal.
My company just left at 5:30 and there were up here from Texas......So I know the stories there.......

We live in Jeans here......I dont wear them to church tho.....

In winter we eat beef soup
Ham soup and
Chicken soup.

Tonite it was parsley tators, hamburg, creamed corn , lettuce salad.

I had made the walnut filled rolls earlier......Same type as cinnamon rolls .
Delicious.....I never did it like that before.....Husband says, hurry and write it down so you remember......

You can use pecans........
I used walnuts, but have pecans also.
I threw them into my new chopper and they was ready to go.
Added brown sugar to taste, and a tiny bit of milk and stir it up.

Spread it on your dough, roll up and slice them into pieces .. Let raise nad bake. Till golden..
Yummmmmmmmmmmmmm

HD has been eating them all day, even for his snack watching tv......

I love jalapenos, I can eat them by themselves, but the pineapples I don;t know. I am not saying it sounds bad just "I don;t know" skeptical kinda thought. idea

Made a roast yesterday mashed tatos and peas. I do desert for breakfast so not dinner desert for me.

Cinta I like the pineapples with the jalapeno's because the sweet with the spicy is a good mix on a pizza,, it took a long time for me to try it now I'm hooked! lol

I made the hamburger helper taco bake & salad--and you know what?/ it was pretty good
DH said I have to buy a bag of corn chips to use the next time I make it--so I guess it is a keeper (I had not made it before & DH will not eat ALL HH'ers)

I used to make an occasional HH for lunch when I had foster kids. But I really liked putting together my own conglomerations better. It was actually cheaper, too. At least back then it was. Everything has gone up so drastically.

That is why we raise all veggies and can an freeze.
We raise our own beef cattle for food too......I have no idea how a family can afford the store meat????????/

we only buy chicken or pork .......Not often.. Fish.

I like that one Carol,, I use fritos when I make it and Dr it up a bit with grated cheese and add chopped onions to the meat when I brown it,, I like it even better the next day,, I put fritos on a plate then heat up the HH Taco bake and put it over the fritos,, kinda like a frito pie,,!

Tina your sooooo right I remember when HH was 89 cents a box,, now ~here it is $2.29 a box,, it's almost at the point when cooking will have to go back to , making from scratch because the convenience of boxed cooking is getting too costly! shock

I like to use the lasagna HH because DH likes lasagna & I don't want to spend the time to make it--and it makes so much--when there is just the 2 of us---

and now it is a case of the easier & quicker the better as I do not start cooking until DH is home in case I need help. But I must say I really liked the taco bake---

Diane--have you ever added sour cream too?? I may do that next time as well.
