we had a beef ribs/carrot/onion casserole (baked in a BBQ/tomatoe sauce)and boiled potatoes then Rod got a nut roll out of the freezer & we had it for dessert.

dinner tonight was something i've named soup reincarnated
i had made homemade chicken noodle soup because scott was sick. we ate that yesterday. today, we had more soup, and when i looked at it for supper, it just wasn't what i wanted. so i added veggies then cooked the broth down. i layered crushed crackers in the bottom of a pan, sprinkled shredded cheese on that, then layered the soup, crackers and cheese. put it in the oven until the cheese melted on top. matthew loved it. i enjoyed it. and nothing was wasted, we got veggies, and scott got 3 back to back meals of chicken "soup" for what ails him.
Today after work I fired up the grill~ patted out some hamburgers and threw them on with some hotdogs, and hot links,, and breakfast porkchops with a slice of pinapple on top, made 'tater salad and tuna salad,, I think we are set for the next few nights,,

We've been eating off the grill the past few days...nice weather.
Today is a rare treat, all the ladies are going out later for Sis-in-law's birthday. We are going to a nice restaurant where they serve the best wings and cheesecake...yum.

we ate from the grill saturday night too. I put potatoes in my slow cooker so we had baked potatoes as well as the meat.---beef & prkk kabobs. yum

I was in the recipe archives on the old site the other night and I printed out lots of recipes from Cindy's crockpot thread. I was so excited! I know that I had looked at them before and planned to print some but just never did it. I have the cabbage rolls in the crockpot as we speak. I went grocery shopping yesterday after work and bought all of the ingredients to make 4 of the recipes. We are eating out of the crockpot all week! It is so nice to come home from work and have it ready. I just did the prep work last night before bed because I don't get up early enough in the morning to do it before work!
The other night I served homemade bruschetta (tons of garlic) with fresh-baked breadsticks, and a big salad with grilled veggies and asiago cheese. Rave reviews from the family, but my men were hungry later—no meat in that meal! Next time I'll have to throw them a steak, too.
I'm grilling up some burgers tonight. I try and do them about once a week. I usually sneak a fresh tomato a sweet pepper, and a garlic clove or two into the meat.
these kids have no idea how good they're eating when they eat my burgers or meatloaf.

Cricket I do the same. I grate up carrots and squash in my spaghetti sauces. It's amazing what you can grate in things with one of those $10 electric mini choppers. It grinds it into a paste.

I had a hankering from some fried potatoes and called Johnny and asked him if he wanted to meet me at the Waffle House. He had already COOKED fried potatos. Boy, were they great.
It's cooler outside today and I'm making a big crockpot of my moms special chili! It's special because when I was little I wouldn't eat it because I don't like kidney beans. So she started making it with baked beans and it's so good! So much better to me than with kidney beans.
I figure it won't taste just like hers but it will be close enough.
Sheri, I just bake Pollock in a pan with lemon and salt and pepper for 8 minutes. Simple because we layer it after with caramelized onions and white sauce.
Mmmm Chili. I love chili also but not the texture of the kidney beans either...so I run them through the food processer and then fry them up into the ground beef. They just turn to a mush and you can't even tell they are there

Jessica, I fry ground beef with onions and make a gravy with the drippings, mix together and layer in bottom of pan, on top of that I layer mashed ptatoes then on top of that I pour a can of creamed corn. Easy and delicious...I bake in a 350* oven for about 20 minutes, cover with foil until the last 5 minutes.
I used to add other veggies also but DD wouldn't eat it so I ended up with this way instead. Most people add a can of peas and carrots into the ground beef mixture.

I think I'm going to freeze some of the chili so we can use it Monday on our hotdogs. And maybe I will do some single serve portions. That's a good idea.
Mom makes Shepards Pie. It's so good when it's cold outside to come in and have a big old portion of it.
I take a cup of sweet pickle juice(nothing gets wasted here ), 1 cup ketchup, 5 tbsp brown sugar, one small chopped onion and a half chopped green pepper. Bring to a boil then simmer for 30 minutes.
I then make cheeseburgers (plain-no fixings) then cut in 4 sections and pour a ladle of sauce over it...it is delicious.

jessica, You just add a cup of water to the bits of meat that get stuck to the pan and boil it til it loosens, add a bit of salt and pepper for seasoning. Then make a paste with 2 tablespoons cornstarch and a bit of water. Slowly add the paste to the pan and boil a bit til it starts to thicken...instant gravy.

Oh My gosh, I am too afraid to read this thread, I just skimmed and It will wreck havock on my Diet. But it will be a great place to find some new stuff to cook for dinner. This place is so great!

cornbread biscuits sounds good. is that like half biscuit mix and half cornbread mix? anyone ever had muffins made out of malt o meal? I just love those!

i make cornbread muffins. just use cupcake papers in your muffin tin and use your normal cornbread mix. you just have to watch to make sure they get done.
goulash is very different, not only from region to region, but from family to family in the same region. I suspect it is a depression meal. to me goulash is hamburger meat, potatoes, and whatever veggies you have on hand thrown in. it is thick....not like a soup, even thicker than a stew. what does it mean to others????

I have had it once--the recipe I had began with stew type meat, that was dredged in seasoned flour and browned and then slow cooked in a tomato based sauce. don't remember any veggies in the recipe.

goulash in my family is elbow mac,, with browned hamburger diced tomatoes and tomato sauce, onions., a little ketchup, a little sugar and seasoning,, when ya grow up with a tight budget,, just about anything we could throw in the same pot was called goulash ,,,,,,,, Never heard of it with veggies in it,,that sounds more like a stew ,,, But I have heard of it with potatoes in it, many People I've talked to have a different version of it too , all depends as Cricket said,, where you grew up and the generational background with the cooks in the family,

Goulash to us is close to what Diane said. It is ground beef, elbow mac, corn, tomato soup, tomato juice and whatever seasonings you like. I put oregano, garlic and pepper. I also add some shredded cheddar to mine.
I have a half a pan of lasagna left! I'd made 2 pans and I'm thrilled I don't have to cook again tonight. Mark doesn't care either, even though we had it when Jiffy was here and last night....he'll pretty much eat whatever I stick in front of him.
Yes Rod will too.--There are a few no noes but not many.
and thank goodness, he is ok with leftovers too...which I appreciate, because my dad didn't "do" leftovers. If mom fixed laftover food she had to change it somehow so he would not notice so much.
like the beef roast that became beef & noodles or the ham & beans that became potatoe soup.---I still miss that.

I'm doing up some pork this evening, just like martha stewart showed me this morning! ha ha. with mashed potatoes and...hhmmm...something else??? I was planning on doing up some snap peas from the garden but there were only two pea pods ready a while ago when I went out, and I ate one....so...... ha ha

Nothing wrong with that Carol! I get them sometimes too! Tonight we had super fast and easy.....steakums on rolls and fries and baked beans. Mark was starving NOW---where you'd think he was going to die if he didn't eat right away and that was the fastest thing I have to make.
steakums, huh? I've been looking for those lately. I don't know if they even sell those down here anymore. where do you find them in the grocery store?

When we got home we didn't have anything to eat in the house. Or should I say anything we wanted to eat. Since I'm crippled for some odd reason, Johnny went to the store and got deli turkey, swiss cheese and tomatoes. It was yummy.
Ummm, I get steakums at Walmart and our other big chain. Martins, which is part of Giant Eagle. I believe they were just in one of the middle open freezer things........they are yummy! With cheese melted on them.

That is so funny that nobody could find them. They do still make them! I don't get the steakum brand though, they are EXPENSIVE. I get the Giant brand.....16 of them for $5.99 and they are just as good as the brand name ones.
today for dinner,, I made baked BBQ chicken,, baked tators , and cucumber salad, then I made Cookies,, Peanut butter with Hershey kisses in the center,

I was in the cooking mood - doesn't strike me much. We had ham, mashed potatoes and gravy, green beans, corn, slaw and cranberries I forgot to open on Christmas day.
Now I feel like a stuffed pig. Guess that's what happens when you eat ham.
Tonight we had baked pork chops.. glazed sweet potatoes, spinach, and cornbread muffins,, sure was good on a cold rainy night. No desert too full,, I may have a cookie later,,

we had homemade hamburgers tonight. I always add something different to the meat each time. and sometimes I add absolutly nothing, not even salt and pepper. amazing how the taste of just meat is pretty darn good. tonight I added some chicken broth and a pack of instant oatmeal. we had our burgers on wheat bread, with lettuce (from the garden), onion, bell pepper, cheese and pickles. YUMMY!

I made a pasta carbonara tonight. Good stuff. But I am building up a lot of leftovers in my fridge. Gotta do something about that. Here doggy, doggy, doggy....

it is ground beef & onions browned, then I add a can of cream of mushroom soup and 1/2 to 1 can of milk & stir well. then I add cooked egg noodles and if I am of the notion I add drained green beans or like tonight some cooked california medley.--no side disah of veggies needed then.
Tonight I made it with ground deer. I had a rather large pkg of it so half of the cooked meat is in the freezer to make spaghetti sauce with sometime down the road.

Well, tonight I got to craving Yorkshire puddings. I like to make up the batter but instead of pouring it all into one large pan I like to make little individual muffin tin or cup cake size ones. Anyway as I was standing in front of the stove ( I like to watch them rise ) waiting for them to finish cooking I was listening to Jeopardy and the last question asked ( not the big question ) was of all things about Yorkshire Pudding! I just love yorkshire pudding and it is all I can do to refrain from eating the whole thing all by my lonesome in one sitting. That is why I make it in muffin tins so that I can limit myself to a certain number and put the rest up for tomorrow ( I hope ). One of my other food passions is real English style cooked scones. I know that we have some U.K. folks here and would appreciate any DETAILED recipes for scones.
My next house will have no kitchen - just vending machines and a large trash can.

Peel and slice tators , onions
Cover with hot milk, enough to cover all the tators. Sprink with salt an lots of black pepper. Bake 350º for about an hour.....check with a fork to see when done. Might be less than an hour.
