Wash and boil 1 gallon of beets. Save 2 cups of liquid.

Cool, peel and slice. Pack into sterilized jars.

Boil up 3 cups vinegar, add 2 cups of saved beet juice, 2 and 1/2 cups sugar, 1 tsp pickling spice or cloves(whichever you like best)and 1 tsp salt. I use pickling spice, I find cloves taste too strong in beets.

Boil for 15 minutes. Pour into bottles of beets, seal and process for at leeast 10 minutes.

Forgot to add, you can use brown sugar in this recipe instead of white...makes for a sweeter beet.
