I'd love to try that recipe 'mixing everything together' is my sort of baking, but I don't know what eagle brand or bisquick is, please could some one let me know? I'm assuming it is some sort of flour?

sorry about the brand references. eaglebrand is sweetened condensed milk. NOT the evaporated milk though. the difference is obvious if you open the can, or even shake it.
sweetened condensed milk is thick (a spoon will almost stand in it) and super, super sweet. evaporated milk is thin, watery, and shakes in the can.
you use sweetened condensed milk for the cookies. the bisquick is the other brand reference. it is baking mix that already has the shortening and leavening added to it so that it is thicker and almost "crumbly". we use it for biscuits here, just add water (or milk). i would imagine that if you could find a mix like that for scones, it would be similar.
both items were the only one of their kind for a very long time, so have become almost synonymous with the item. much like crest for toothpaste and comet for powdered bleach cleanser. hope this helps!
Thanks Jiffymouse, I had researched Bisquick, and worked it out, but the Eaglebrand brought up references for medicated oil/jeans/toothpowder/rice......and motor batteries
Yes an unflavored scone mix would work well. And I know in New Zealand they had the sweetened condensed milk as well. The cups and spoon measurements were the same as ours but the liquid measurements were in liters and metric weights as well. A standard can of sweetened condensed milk is 397g.

Yep, I ran and got a can out the cabinet and checked. I have a couple of NZ cookbooks. In the pages in the back I put my own 'conversions' so I would know how much 500g of butter was. It does get confusing.

But, unless I am making something finicky, I don't always measure super accurately anymore. I just mostly need to know a close amount that I can stretch my mind around. I showed Jonni that just today. She needed a half cup of half-and-half. I got out the cup and turned my head and poured a 'dollop' into the cup. I said "That is about a quarter cup, right". She checked and said "yep". I poured a second 'dollop' in and said, "Half, right?" Again "yep. How do you do that?" A lot of cooking experience and a few years of bar tending on the side. And not liking to wash unnecessary dishes doesn't hurt either.
