Since Maxi and I will not be having Easter Dinner together, we had a similar thing tonight.

We made a hamsteak, baked potatoes, green beans and corn. We baked large dinner rolls also. I always turn my green beans into a green bean salad (with or without the boiled eggs) and add chopped onion and mayonaise. Maxi prefers them plain, the weird little kid he is. lol

It was quite a feast for us.

Traditionally I enjoy potato salad on Easter Day, so I might just make a small portion for me using our secret family recipe.

That cold pea salad is delicious!

Next Saturday Maxi and I are having the Lobster Bisque he wanted this weekend which my girl didn't purchase though it was on the list. I felt really badly about it because it was the ONLY thing he requested for the entire holiday weekend -- and she goofed up the shopping. It made me feel mean toward him! So I promised we would have it next weekend and I will serve it along with a big fresh salad.

And I will even invest in a special box of Royal Crown crackers... the kind of cracker Mainers prefer for chowder. You can't buy them anywhere but in Maine for when Nabisco purchased the factory they discontinued the line until Mainiacs went crazy demanding they bring them back. People were sending us crackers from all over the country trying to help us find a substitute but no dice. So, Nabisco brought them back and offer them only here. They are quite expensive though, but I will get them as part of the treat.

yes I love rice pudding----I usually make the kind one makes on top of the stove--and I have a quick version that is made with evaporated milk.

But I love the one my grandmother used to make---in the oven---yum---it was basically custard & cooked rice---but she stirred it every so often so that the custard & rice were well mixed--- thumbup

I decided to add a nice salad with the Strata. I made lettuce, tomatoe, cucumber and fish filets chilled & broken into bits topped with a lovely lemon vinagrette.

That'll go nicely with the Strata.

Good luck Barb thinking of something to do with your hamburger!

too bad you made that name up, dodge. I was just making a joke hoping to learn of a new word and/reciepe.
your dinner sounds like it was wonderful!

I made chili tonight. not my best! normally I use just hamburger meat, but tonight I did half ham. b. and half ground sausage. it was WAY too salty. I cut way back on the amt of salt knowing the sausage had plenty. BUT, I should have not added any salt at all. oh well. our bellies are full. now, I'm off to do some dishes with the help of the elves in the dishwasher.

Actually today Hubby made it , that easy.

No recipe.

I just put the bone in my Dutch oven (favorite soup ) maker.

Cover with water as much as you wish.
Add cabbage leaves, tators diced, Little bit of barley, I like.
You can also use rice.

Let it cook really slow for a few hours an it is yummy.

We love it .
If you have left over kraut it can go in too.

Johnny bought some Tyson boneless chicken breast at Harris Teeter yesterday and I cooked them on the grill tonight. I fixed boiled red potatoes and cut up a cucumber.

do you use ham or just the ham bone in the soup. I'm gonna make that one day.

dodge, Johnny and I figured out the cost a month or whenever it was ago when everyone online was talking about coupons and the like. It's cheaper for us to eat out than to buy groceries for every night. It doesn't take a lot to please us food wise. Johnny will bring home a hamburger from Cookout or something from subway. Sometimes I'll bring us home a hotdog from the best hotdog place in the world. (it's the only place I'll eat hotdogs from) We don't go out to eat. We get something and bring it home.

I love having some ham on the bone .. It is great with ham left.

It is easy.

You did great the chicken.. Hubby barbq ours in summer.

You made a good country meal.
We eat cukes and lettuce tonite.. Every nite we use lettuce some how.

Depends what prices are in your areas , to what it costs.. Some folks eat out nitely.. $20 each person for a home cooked meal is not for us.
But if one can afford it ? Who cares, helps make the other guy a living.

I do buy my Pork and chicken and fish....We eat own beef.

I make chicken soup too from the cut up chicken in the store. 58c a pound and I buy about 20 pound a clip.

I can't see how eating out (or buying from a fast food place and bringing it home) could be cheaper than cooking?

no, dodge. I've never made soup with the ham bone, only beans. I do love homemade beans and cornbread! yum yum! your ham soup recipe sounds very good.

hubby made jambalya tonight. he must have been reading over my shoulder the day I dug up that ham jambalya recipe for merme. he was singing that song all weekend. or maybe I was singing it and got him to singing it, so he wanted to make it? ha ha who knows?

We like corn bread and Beans too.

some days I make barbq bake beans with about 5 different beans ..

Or just cook bake beans thats good too.

We dont often eat out or bring in fast food.
Rare occassion here.
hubby eats 3 meals a day.. I only eat breakfast on sundays, he makes that .
Bacon eggs and toast and my favorite homemade jelly or jam.
He insists......so I let him.

I am always changing around to different types of meals.

My brother in law called me Garbage disposal, cause I had such a variety of meals .......I laughed.

We had leftovers tonight.

Maxi had leftover steak and a leftover baked potato.

I had leftover ham in a sandwich with lettuce & tomatoe.

Too tired for any real cooking and Maxi is easy to please.

We can get 2 burgers with lettuce and tomato at Cook Out for $4.34, 2 tuna subs (the round ones-can't remember what they're called) for $7.00, 2 hotdogs for $4.34 and we figured that was cheaper than driving to the store and cooking. It may not really be but it sure is easier. A lot of nights I eat a peanut butter sandwich or grilled cheese sandwich and Johnny will eat cereal. He eats a big lunch every day and isn't always hungry when he gets home. We both like soup though so I know we'd like that ham soup.

One of my problems too is that I can't eat meat if I've frozen it. Don't know why. So if I'm going to cook meat one of us has to buy it and then we have to eat it pretty quickly. I know meat that I eat other places has been frozen and it doesn't bother me but if it comes from my freezer I can't eat it.

Everyone has hang ups.

You would need to have a farmers appetite to understand our life style.
Were full course eaters.
Meat, veggies, tators folks......Not for desserts at meal times.

Hubby does work hard n needs all the good stuff.

We're having homemade baked macaroni and cheese with pork chops on the side. I usually don't serve anything else with baked mac 'n cheese but today I'm in the mood for a chop. So I'll cook them up and we'll have them ready if we want one.
