This is an easy recipe anyone who likes a variety of beans will enjoy.
Ingredients:
Leftover ham bone
package of 16 dried beans, sometimes called "Ozark Bean Soup". These are dried beans & will need to be soaked. If 16 Bean packs aren't available in your area, look for any variety pack of dried beans.
Several carrots sliced thin.
A few
potatoes cut into bite sized pieces.
One medium onion, diced small.
Can of stewed tomatoes, diced tomatoes, or two fresh tomatoes diced small.
Directions:
Soak the beans overnight.
In the morning, drain the beans.
In a large soup pot, combine the soaked beans and hambone and cover with a goodly amount of water. Allow to cook on medium heat until the surplus meat falls off the bone.
When the beans are nearly finished, add the other vegetables and cook until
potatoes and carrots are tender, stirring frequently, being careful not to burn the beans.
This is YUMMY and cornbread or corn muffins go really well with it!
