I really enjoy corn pudding and I'm always up for trying new recipes for it. This is the one we are using for tonight. It is quite good though not as creamy as some others I have tried.

If y'all have any corn pudding recipes would you post them here in this thread? I'd love to see some variations on the theme...


Corn Pudding With Jiffy Cornbread Mix

Ingredients:
1 can creamed corn, not drained
1 can whole kernal corn, drained
1 (8 oz) container of sour cream
1 box Jiffy Corn bread mix
1 stick of butter, melted
1 cup shredded cheddar cheese

Directions:

Grease a 9 x 13 pan and preheat the oven to 350.

In a large bowl, stir together the corn, sour cream, melted butter and Jiffy mix. When thoroughly combined, pour into backing dish and bake for 45 minutes. Remove from oven, sprinkle the top with the cheddar cheese and return to oven for 10 minutes.

Serves 6 to 8

The other heart was given to another for us to find.

Merme I use the same recipe with the exception ....

I put the cheddar cheese IN the mix,,

and

I use a can of whole corn Mexican Corn instead of regular corn
(( By Libby's) it had diced red and green bell peppers in it. )

and

about 1/4 of a jalapeno diced<(sometimes I do, sometimes I don't)
other than that,, I use everything else in your recipe. thumbup

This gives plain corn puddin' a bit of a punch, BUT not spicy Just very flavorful thumbup

That does sound good, Diane!


Libby's Mexican corn can be hard to find up here, though. I've looked for it before because it appears in many recipes my friend in OK uses.

Green Giant also makes a Mexicorn. That is the kind that we have here. Maybe you have that?
