I read an article waiting at the doctors office today that says if you plan your meals in advance, not just right before you go home to fix them, that you'll eat healthier and will eat less.

I fixed chicken with rise, green peas and baked Johnny a sweet potato. We had it again tonight and the chicken and rice was better than last night.

Johnny came home early today and I wasn't here. When I got home he had fried chicken wings, made potato salad (by himself) and cooked some vegetables on the grill. I am stuffed like a Christmas goose.

don't blame you one bit Cricket. The food was great and I'm still full but I had to do the cleaning and there was grease everywhere. Frying chicken makes a mess.

ah the cleaning from fried chicken--THAT is the main reason I do not fry chicken. I oven fry it----not as good but not bad either

and why is it that men think they've done such a GREAT service by cooking but then they don't clean up afterward? did they miss a meeting? cleaning up is PART of cooking, right??!!
OK....I'll go to bed now before I get myself in trouble. lol

Oh, I dunno, Cricket.

When I was married to Maxi's dad, we took turns. If I cooked, he would clean up. If he cooked, I would. Whoever wasn't doing the clean up would mop the floor & make the coffee and get us all set up for our evening activities. We thought whoever cooked should be off the hook for the clean up.

But at my sister's house, after she had cooked, my brother-in-law would get out his guitar. The whole family would stay in the kitchen, singing, and helping my sister with the cleanup. They'd get done in record time and be able to sit with the coffee together.

why

I guess different things work in different homes.

I use a splatter screen over the pan when I fry chicken so I don't get the mess.

Tonight we had...

Chicken soup and turkey sandwiches and Cheese Doodles.

Not too unrepectable, considering Friday night is my low point of the week.

I might have mentioned this on here before but can't remember. One thing I fixed last night was boiled red potatoes with thick sliced squash, diced onion and a little cabbage and added butter and salt and pepper at the end. It gets sort of thick at the end and it tastes great.

Tonight I tried one of Ginger's recipes. She fixed it for me and I loved it. Had to buy a food processor to make this stuff.

Roasted Red pepper Pasta to which I added chicken because if there's no meat Johnny thinks he hasn't eaten.

Johnny walked in said "ewww. What is that? It looks like sewage." He ate a few bites and said he was getting cereal. So he had cheerios and I ate ALL the pasta cuz it's good.

What didn't he like about it? Is he just not a pasta eater? I could eat pasta every day if it wouldn't make me incredibly fat! lol

Last night we had spaghetti and garlic bread with a lettuce salad. Tonight we go to have dinner at James' brother's house. It is the last night their family from Louisiana is in town so we are all having dinner together. I believe they are keeping it simple tonight....hamburgers, hot dogs, potato salad, etc. I am bringing a veggie tray. Most of James' sister's do not work in the summer because they work at the school. I figure they can make the time consuming stuff since they are home all day and I am at work. lol Really though, I don't have time to make anything before tonight. Last night I cut up all my veggies and am calling that good!

I agree totally with your decision on that one Jess.

Yesterday at a meeting I asked a lady what she was having or dinner and she said tuna fish. It's been years since I had a tuna sandwich so I stopped on the way home, bought a can, added dill pickles, boiled eggs, mayo, tomatoes and put it all on squishy, no nutrition white bread and it was GREAT. May eat it again tonight.

We had broiled filet of sole fish with baked beans and brocoli. Also made homemade tartar sauce to dip the fish in - yummy!

Tonight will be fend for yourself for Brian and me since Don and Amy won't be home.

Last night we had a variety of foods....a potluck with the family. Burgers, corn on the cob, salads, cheesy potatoes and the list goes on and on. We had a black eyed pea salad (I don't know what else you would call it) that was fantastic! I had never had black eyed peas before. They are not really something that we eat up here. It was good though. They told me the recipe and it is so easy too which is a bonus!

Not sure what we are having tonight....guess I better start thinking about that. Anyone have any great ideas??

I just picked up some focaccia bread rounds. I will take one of those and fill it with dry salame, chicken, provalone and some veggies and lettuce and dressing, wrap it tight and put it in the fridge weighted for a flat tasty sandwich cut into serving sized wedges. I am so into grab and eat type foods and cold to offset the heat.

I got tired, so we just had fish and salad.
the beans aren't even ready yet...another half hour. so tomorrow we will have the beans and cornbread with some roast!
