Carol to answer your question from the previous menu thread, spaghetti squash is easy to prepare.

I cut mine in half lengthwise. This does require some strength and perseverance! Or, you can ask Rod to do it OR have them do it at the grocery store.

Once it is cut in half lengthwise so it looks like two long canoes, you need to get the seeds and loose fiber out. I use a spoon which I turn so the bowl is faced down and then simply scrape. It works great!

Then place them both cut side down in a baking dish. Add about a cup or so of water, maybe more depending on your baking dish. Cover with foil snuggly.

Bake for about an hour at 350 to 375.

The squash will steam under the foil.

Remove from oven.

The squash will be hot and soft, so be careful here. I use a dish towel folded so I can pick up one of the squash pieces well enough to turn it over or to stand it on end.

Then using a fork, you can scrape out the steamed meat and it falls out of the squash in long strands like spaghetti. I have also used one of those pronged spaghetti serving spoons to pull the squash out of the shell. It will let you scrape it all the way down to the shell so nothing gets wasted.

Some people serve it with spaghetti sauce on top, but we prefer melted butter, salt & pepper.

Maxi made us his Gigantic Cheeseburgers tonight! Mine was so big I simply could not bite it and so I ate it with a fork. That is, I ate as much of it as I could using a fork.... it was far too big for a single meal. My kid likes his burgers THICK, I suppose! lol

I do not know what we are actually having for dinner tonight. Probably the loaded potatoes in the crockpot right now and the meatballs in the oven. I also have stuffed baked potatoes in the oven and stuffed peppers. Those are going to be packaged for the freezer and different days. I love cooking days. My house smells nice.

the problem wil be tomorrow night, as I a taking my MIL shopping tomorrow.

if it is one thing I hate, it is being gone all day & coming home & working.

I think I will stop at the deli on the wasy home for Rod. I can eat soup. clap

Chef Salad is a lettuce salad with:
Tomatoes & any other veggie +
cooked egg, chopped, sliced or halved..
cheese, cubed or shredded
meat or meats, such as ham and or chicken, sometimes beef. cubed or shredded

Sometimes other things like craisens, nuts, croutons, etc.

and then the salad dressing of ones choice.

it is an all enclusive meal. clap yummy good.

we had leftover burgers & mashed potatoes for supper.
I added baked halved grape tomatoes

You sprinkle them with sweet basil, garlic salt, cracked pepper & parsley. Then you spray them with Pam & bake them at 400 for 15-20 minutes, depending on the doneness one desires.

Yummy.

I had alaskan whitefish---fries, & oatmeal cake.

DH had shrimp, fries, slaw, rye bread & peanut butter pie.

That is my favorite meal, esp. the LEMON SQUARES!!!!!!

Whole wheat pasta & bulgar/quinoa meatballs, Spinach salad with goji berries, Homemade and homemade garlic bread(:ding:), and strawberries. Monday is my day off so I like to spend it in the kitchen thumbup.

Thanks, Tamara. I tried to get Rod to Bar-B-Que last night but by the time I asked he said it would have been 6 before we ate & he was hungry---mind you it was 6 or after when we ate anywayy. rolz

Tonight I am doing something with stew meat. I guess I will get out my slow cooker here in a few...

Yes, Rod does it all the time. if I EVER lifted my hand to a grill, Rod would never do it again---so of course I do not.
