Yes, potatoes are best canned in a pressure canner.

I'd love to can some fresh bush beans but I need a pressure cooker...some day.
My mom canned beans for years in a regular canning pot. and they were not pickled.

Years ago everyone around here used a water bath canner for everything. I guess there wasn't even such a thing as pressure canning. But now all the literature says pressure canning is safer. I do have some friends who still use a water bath though and they haven't died from botulism yet. One of my friends doesn't do either for tomatoes. She just boils the jars and lids, cooks the tomatoes, puts them in the jars then turns the jars upside down to seal. Says she's always done it this way.

Yes, high acid foods are still good in a water bath process, so tomatoes, pickles and jams and jellies with acid in them work well. Low acid foods need to be heated all the way through, thoroughly. So pressure canning is best. That is best for meats, potatoes and beans. I am sure that is why Carol's family did that 3 hour hard boil on potatoes.

sonny's family did the 3 hr boil...
even with beans mom did a 20 minute water bath. but then she could have well cooked the beans first...and she put raw tomatoes in jars w/ salt & then the water bath. none of us dead yet...though I freeze mine..

I spent 3 + hours outside this afternoon. I cleaned off the brick area around landing of the deck steps, all the edging bricks, 2 flower beds that are up against the house, (well all but the Autumn Joy sedum). Then I cleaned off part of my veggie garden (herbs & tomatoes are left to do), and part of my long flower bed in the back yard. And then I took in my Hummingbird feeders. Those I have to clean yet.

One of my feeders was empty so I cleaned it and put it away rather than refilling it. I'm not convinced that the hummers are totally gone though so I'll wait a while on the others.

Bedding your yard down for a winter blanket, Carol? yea, well, sorta. I let it go last year and then ended up not getting it ready, so I made a point of doing it this year before it got too cold. I hear it may be nice yet tomorrow so I hope to have time to do a thorough job. Sheri, I am not convinced they are completely gone her either but I knew they would not be drinking the nectar, they both had bugs in them. So now they are gone.

A man is here cutting back some gigantic shrubs. It's like all of a sudden, guess all the rain we've had, and these things are taller than the house. We need our trees pruned too but the tree man isn't calling back.

I pulled the last of the celery out , and gourds . Still have parsley an carrots to go.
Lots of blight here this year.
