I started all mine from seed back in February and just transplanted them about 2 weeks ago and already I have blossoms but the plants are way to small yet, maybe 16" high. Should I pinch off the blossoms(which are male) or leave them?

I only pinch if they bloom before transplanting...but I have a short season.

I forgot to add...tomatoes blossoms are both female and male in the same blossoms.

Hmmm, I was under the impression that there is a difference between blossoms on tomatoes, the female has a bulge and the male doesn't. The blossoms were already there before I transplanted but had not opened up yet, now I have full yellow flowers.

I never remove flowers from my plants. I have been gardening since 1980. I always have very prolific plants.

I live in the south in a warm climate. I try not to transplant early by when that has happened and my plants flowered when they're small I have removed the flower which allows for leafy growth and a stronger stem. I wouldn't consider 16 inches that small though.
