Bestofour, I'll have to measure it out this week when I make it. I have it written somewhere but can't find it. I just throw it all together now without measurements.

Junie, did your late parcels finally arrive?

I seem to remember there is a recipe thread here..I will check
To see if I can find it..you could write it down there and then you would always know where it is

I know I wrote it down on a card, GG wanted all my recipes. Now she doesn't know where she put them. I will measure it out Thursday when I make more.

It's the most basic bread recipe but it makes for a good sandwich loaf.

I'm not a fan of sourdough and that's what everyone makes. I'd love to have a good sandwich bread recipe.

It's was 60° today and I think it's supposed to be 70° later in the week. The ladybugs come and go according to the weather.

About the sourdough bread. I have read that true sourdough bread is a good choice for diabetics..perhaps that is why it is so popular.

60 here today as well. Warm here tomorrow as well. Thursday it is supposed to rain..I am thinking that will bring (supposedly 68) then perhaps some rain.

Basic bread:

2 and 1/2 cups warm water, add 2 Tbsp of sugar. Stir then sprinkle 3 tsp of yeast on top, let set for 15 minutes.
Stir, then add 1 tsp of salt, 3 Tbsp of oil. I then slowly add in 6 cups of flour. I use another 1/4 to 1/2 cup as I am kneading it. I knead for about six minutes.
Add to an oiled bowl, let rise for an hour, I cover it with a thin tea towel. I then knead it down and shape into two loafs or one loaf and buns. I brush the tops with oil again, then cover for an hour to rise. You can use melted butter or shortening instead of oil.
I then bake at 400* for 30 minutes, buns for 20.

Easy peasy, it's the easiest bread to make.

Thank you Sunny. All purpose flour or self rising flour? Do you use shortening or butter or oil. I've got to go to the store for yeast so I can pick up whatever else I need. I can't wait to make it.

It was 70° today so I walked around the golf course. I know the bugs will be horrific with this warm weather this spring so I'm trying to enjoy the weather now.

Your first kneading..do you knead until smooth?? And the second time..just to put check down and form into loaves.

I have active dry yeast..in pkt is 1/4 oz. Are you aware of the transition measurements ?

Bestofour, it is just regular flour...I use regular vegetable oil.
Junie, a packet of yeast is a little over 2 tsp. I knead it until it is at a point where you poke it and it slowly comes back, it is hard to explain...but I timed it and it was 6 minutes. The second is just a poke to let the air out, give a quick knead of a couple of seconds...form and put in pans to rise.

I've been up since 3:30 a.m. I just can't get a good night's sleep this past month.

Thanks for the information, Sunny.

Sorry for the 3:30 rising. Sunny. Hopefully that will quit soon
I hate to say this out loud, (I hate to jinx it) but I actually slept well last night.

Ground is wet this AM...it is overcast..and cooler.
Supposed to get unseasonably warm this afternoon...then begin to get cooler starting tonight. With perhaps some rain and or storms. why

I'm planning on going to WalMart tomorrow and pick up yeast and try making the bread.

There were a few nights where I didn't sleep more than a few hours and it was terrible. No idea what happened because I usually sleep great. Hope you get back on track soon Sunny.

Good morning, we had freezing rain yesterday. Snow storm for tomorrow, Mother Nature is so confused the past couple of years.

Let us know if you like the bread Bestofour. It's not a rich tasting bread but it is delicious when toasted.

Good Saturday morning!

Sunny. I gave your bread recipe to my DD..you said it made good sandwich bread, and she had been looking for a sandwich loaf bread, so I gave it to her to try. I'll let you know what she thinks.

I forgot the yeast. I didn't put it on my list. I'll go again Monday.

We were supposed to get rain today but it was 75° and we didn't get any. No rain in sight for weeks. We're going to dry up and blow away.

Do what I did. Sheri....I bought a whole lot of yeast at the beginning of Covid...and what I didn't use right away I put in the freezer..it will keep forever. Just let it sit out a bit so it is not cold before you use it.
.I just made bread today. My yeast worked perfectly.

After reading Sunny's post below, I see that I forgot to say.. I buy little packets of yeast, as I do not make bread real often. My favorite recipe calls for 2 packets of yeast..and when you buy it here it comes in 3 packets together. I cut 2 off and put the 3rd one back in the freezer for next time..
My DD buys the yeast in a jar like Sunny.

I just buy small bottles of yeast, I keep it in the fridge. We get it here in a 4 ounce, dark glass bottle.

It is storming today, a good day to make chicken vegetable soup. I'm also making a few freezer meals for myself...I'm the only one who likes Chinese food here. I make a large batch, cool it down and freeze it in freezer bags.

Ginger made the best chicken soup when I was last at her house and I asked her to make it again when she was just here. It's more like a stew than a soup and is sooo delicious. She found it on Facebook or Instagram or somewhere like that. She uses chicken breast rather than thighs but I'll bet thighs will give it more flavor.

I've decided to wait until Tuesday to go to WalMart to get yeast. I'm meeting some friends for lunch Tuesday so I'll go then and not go out tomorrow unless I have too. It's just very windy and after being 74° yesterday is supposed to be 25° tomorrow.

About thighs instead of breasts. A lot of my soupy recipes that call for Breast meat I use thighs and legs. But really because the breasts sometimes dry out where the dark meat does not.

Do you have the recipe of Ginger's soup ?

I used to take leftover chicken vegetable soup, thicken it with some cornstarch and make pot pies with it. I need to do that again soon.

It stormed all day yesterday, turned to freezing rain in the evening then back to snow. I've got about 14 inches of snow to deal with this morning. They cancelled school as well.

Oh my gosh!!! That's robbery.

I made the bread and my house smelled soooo good and I love the bread. It's delicious. I used melted shortening instead of oil. Next time I'm going to use butter. I do have one question. Can I add a bit more sugar or will that mess up the yeast to sugar ratio and not make it rise or something like that?

You can add extra sugar or even some honey. I have added more when making the dough for pans of rolls. I am glad that you like it, it's basic but still delicious.

I have also made it, rolled it out after the first rise. Spread soft butter, brown sugar and cinnamon. Rolled it up, cut it in slices and let it rise again in a large square pan, easy cinnamon buns.

Well thanks.. I will just use 2 pkts. One of the recipes I use says 2 packets of yeast to 5-1/2 to 6 cups of flour.

Snowing a bit, wet snow to stick to the ice is a good thing though.

Does anyone have anything fun planned for the week end?

Good morning! It is my brother's birthday today. His kids are having a surprise birthday party for him.
So that will be fun.
