mine are orange, and splitting open now, the stems they are connected to the plant with are browning too... I'm going to pick mine soon,...

I'd wait 'till the start to split, or brown and shrivel up, or get really really dark yellow

That's right, Christy. Mark and Dianna, if they are starting to split they are definitely ripe. Cut off the ones that are splitting or deep yellow/orange and leave the white ones on to ripen further. You'll know when you cut them in half to dry, cuz the seeds will be brown if they are ready.

thanks guys---That is what I thought--

also somebody (don't remember who) advised to put a piece of nylon around the egg when it is near time to split open--said that way you would not lose any seeds--does anybody remember this?

I am having a real hard time getting mine to stay alive so the eggs will ripen lol I am having to mist & water them most every day---and the leaves are more yellow than green--OH ! they are all in pots--and are outside---

I did have them inside after the eggs began to grow--but they were not looking so good so I took them back out---they are on my east facing roofed porch.
