PICKLES SWEET AND SIMPLE

1 Gallon cukes sliced ( you size choice0
8 Small onions sliced
2 medium peppers diced
1 Teaspoon ALUM
Put this all in a Crock ( Use 2 gallon one)
Sprinkle with 1/4 cup Pickling Salt
and water to cover it all.
Let it stand for 3 Hours in that crock

Lift the pickles etc. out of the Brine
Be sure you lift it out not pour it
Mske the Liquid

5 cups sugar
2 teaspoon mustard seed
1/2 teaspoon Tumeric (I love tumeric0
5 cups Vinegar
1tablespoon celery seed
1/4 teaspoon cloves

I use a large steel oval roaster pan it fits 2 burners.. ha ah
put the Liquid in the pan
Gently put the cuke in the Liquid

Heat this up to a Boil
Do not boil at all .

Pack in Hot Jars leaving 1/4 head space.

If you arent familiar with how to do the jars first.. Wash them in soapy water and rinse.. Put them in clean water in a large pot to sterilize.
about 20 minutes will do it .

Packing pickles, be sure to run a silver knife around the out side of cuke to rid air bubblers.
I stick both my jar lids in the sterilized water .. Just dip the rubber part.

Seal Let stand to cool..........
After they age they are awesome......

* ps the Tumeric makes the pretty yellow color.

My sister in law makes pickles and she gave us two jars.. and I had to throw them out! They were sooo salty! I could not eat them. zoink
