anyone have a reciepe using cucumbers? I have several in my garden ready for picking. we've been picking a couple each weekend and so far we've eaten them raw and with tossed salad. I already have a recipe with the cukes and tomatoe and tony chacheries. plan on doing that soon, but i'm the only one that will eat that.
any other ideas? bow

slice the cucumber in fairly thin slices. do the same with an onion (vidalia would be a good one to use, although you can use any one you like).

combine in a bowl; sprinkle liberally with garlic powder (not garlic salt) and mix in a tablespoon or two (depends on how big the cuke was to begin with) of mayo (the real stuff, not the salad dressing). let sit, covered, in the fridge for about an hour.

mix and taste...add more mayo if you want it creamier and add more garlic powder if you think it needs it.

yummy!!

In Holland we ate a lot of cucumber on the side with dinner. It is to me still the simplest and good tasting.
Peel the cuke and slice very thin. Sprinkle with some salt and toss. Add white
vinegar, oil, pepper,and sugar. Toss again and set away cool until dinner is
ready. Serve on side in bowls.

Peel cukes from tip to root end to prevent bitterness of cuke.

I make cold cucumber soup every summer. It is delicious on the hottest days. I do not use the recipe that suggests adding a touch of mint.

COLD CUCUMBER SOUP

Ingredients

1 very large cucumber, peeled and coarely grated (or very finely chopped!)
2 cups plain yogurt
2/3 cups sour cream
salt and pepper to taste
*optional: 4 tablespoons finely chopped fresh mint
*optional: srigs of mint for garnish


Directions:

Blend together the cucumber, yogurt, sour cream, salt and pepper. Chill for 2 hours. If desired, add mint just before serving and garnish with sprigs.


Alternate recipe:
You can also use clear chicken broth as part of the base and increase the amount of cucumber used.


These recipes are fantastic on a hot summer day!

Merme, tomorrow is my grocery-day. The cuke-soup looks so easy. I will make it.
I live on plain dannon yoghurt anyway and I can eat sour-cream with a spoon. So
all my favorite ingredients are there.

Merme, made the cuke-soup was very good. Added some chicken bouillon to it and
chopped parsley. Mint would be very nice. My Son came by and ate a bowl full of it. Thanks Larkspur
