Hello everyone! I have tried a number of times to grill chicken and it usually turns out dry? What am I doing wrong and is there anyone out there who could give me some chicken recipes for the grill? Thank you all Rita

In my family, Rita, we par-boil the chicken before we marinate it and grill it. Then it is not on the grill for an overly long time to dry out AND it gets cooked as thoroughly as one wants chicken to be cooked.

We were given two hands to hold, two eyes to see, two ears to listen & two legs to walk. But why were we given only one heart?
The other heart was given to another for us to find.

Cook it over low heat. Sometimes I use indirect heat but it takes a while then. I grill chicken quite often. You have to really watch it. I have a meat thermometer too which really helps. I am always nervous about chicken being done and now that I have the meat thermometer I don't have to worry about it so I don't overcook it to make sure it is done. I know when it is done! Marinating helps too! I use a lot of different marinades for stuff like that!

I cook my chicken to 160 - 165. I don't really have any recipes for marinades. I use a lot of bottle ones you buy at the store. Sometimes I just use italian dressing. That is good too!

I use italian dressing for marinating lots of meats...veggies too.
if you didn't want to do the double cooking thing (boiling then grilling) you could wrap in foil to hold the moisture in. when it's done open up the foil a bit to let in more smoke flavor if you want. or unwrap and put it over high flames for just a bit on each side to darken it up once it's cooked.
