Tamara did you make black currant jelly? I have some but didnt yet .Any Hints?

We don't have black currants here but I have made red currant jelly...
I used 6 cups red currants, mash up and mix with 1 cup hot water, bring to a boil. Cover and simmer for about 10 minutes.
Wet and wring out your jelly bag, pour the mixture in and let drip. You'll need about 6 cups of juice...cook more currants if you have to.
Use the juice with 4 cups of sugar, bring to a boil for 5 minutes and add 1 package of liquid pectin, boil hard 1 minute then pour in jars.
If you don't want to use the pectin you can do it the old fashioned way but cooking it down enough to reach jelly stage only leaves you with 1/2 the amount of jelly I find.
I love the liquid pectin you can buy now...it gives the jellies a softer texture with less cloudiness.

Belinda ........oh dear me, you must be bored with just one. I am a person who thinks Variety is the Spice of life........I make many different jellys and jams...........and love them all.. Strawberry is included, grape, peach,blackberry, raspberry, currant, apricot...........YOu name it .Variety.........is my motto in life..........

Lookin' great Dodge red currants taste cr@ppy on the bush also. Strange how they make great jellies though. I bought some of those mini jelly bottles last year...great for gift giving/sampling I find.

That is what I just did this morning.. Gave my sister 2 jars of my jelly. Her inlaw from Ohio called yesterday.... He said guess I wont be getting any jelly for my birthday.. When she was in Ohio I gave the both of them jelly everytime I went there, or they came here. She loves my food. DOnt last long when I have guests. Thanks for all the tips Tamara....I just did it and HD loves it .. I was worried cause he said granny made it , and it was horrible.DDaaaaaaaaaaaaaaaaaaa She didnt take stems off or skins.

I'm sticking with the strawberry
I've tasted some really good ones but just come back the strawberry
the ex's mom canned all the time and made all sorts of jellies and james and she did some fantastic cherry once (I picked the cherries so she gave us several jars when she finihed.
and my grandparents used to own a small country grocery store so we could sapmle any flavor we wanted

I'm the same, I make lots but strawberry is still my favorite. Especially when it's snow storming out and the stove is just crackling. It's in the minus 30's out and yes that in fahrenheit. And you pull that hot fresh homemade bread out of the oven, the butter just melts as soon as it hits it and you smear a dallop of strawberry jam from a freshly opened bottle. oooohhh, almost makes our winters seem worthwhile ....almost.

No, we dont have cherries......i hate sweet cherries.. But love the sour.
When we get banana splits, I give away my cherries on top.LOL

Nay.............Apple trees sickly ones and one pear.. Old and died off......have bushes ........Strawberrys, grape arbor, blueberrys.
Tonite I picked currants red/black and Blue berrys.......I am the only one who like them.. We have raspberry an blackberry bushes.. I hate black b.........but I do pick them for pies.
Fruit trees need expensive sprays to get them nice ...AN they say it causes cancer?????????/

sounds good..I like pies. I just have pecan trees and probably wont get anything year they are falling out now little and green no good, none at all.

I have two sweet cherry trees but they aren't big enough yet to produce much...and I can pick my sour cherries for free. Choke cherries grow wild here, they are small but make great jelly.
Belinda I have apple, plum and cherry trees. Strawberry, yellow raspberry, black berry and red currant bushes. I can also pick my blueberries, strawberries, red raspberries from the wild bushes. Even nut trees grow wild here.
I used to have gooseberry bushes but they died, got to get a few more cuttings and re-grow. There are gooseberry bushes everywhere at an old abandoned house a 10 minute walk from here.
