We have a recipe thread Inkie...you'd have to search up the canning recipes in there though. We usually only talk canning a little later in the year.
I pickle my beets so I have no problem with losing colour but I suppose you could can them without pickling. I do that with bush bean but it take alot of processing time in a boiling water bath. And I'm assuming beets would take a whole lot more.
I'll call my grandmother later and ask her, she's bottled everything.
