I heard or read somewhere about freezing bananas if they get over ripe then using them to make banana bread. I thought I had read it on here somewhere, but now I can't find anything? anyone know?

Yes, you can put your bananas directly into the freezer and use them for baking later. You can put them in as is but I like to tuck them into a plastic bag because I have had them ooze sticky juices. The peels will turn black but the insides are still good for mashing/baking.

Awww.....I didn't think of looking at the home page under reciepes. I only looked through the forum under 'your favorite reciepes'. thanks a lot! So, this cooks up more like a cake than bread? you dont have to let rise or knead. I'm assuming it will work fine without the nuts? also, my bananas were turning TOO ripe when I froze them. I thought that was better for banana bread, but this receipe just says 'ripe banannas'. I guess I'll put them in the fridge to thaw tonight and cook it up tomorrow. thanks again.

Cricket , I never thaw mine- just peel them and mash then in ... works really well for me-lately I have taken mine when really ripe and squish them into a freezer bag in pairs ... takes up less room in my freezer that way... I never put nuts in mine either...to many people in the family are allergic so we just don't use them much... I also use applesauce in mine for extra moistness.... Nana
cool. maybe I'll make my tonight then, since they don't need to be thawed. good idea about mashing and freezing in pairs. then it's all measured and mashed and waiting on you! I do something similar with cakes and such.

the bananna bread just came out of the oven and it is wonderful! I had a hard time getting it to cook in the middle for some reason, but covered with foil and cooked another 15 minutes and it turned out fine. I added some cinnimon apple sauce like nana said. (well, nana said applesauce, but I had some cinnemon that no one would eat so I used that) Only 1 tbls. I really didn't know how much I should add? great stuff! thanks!

A tablespoon is alot to add to a cake, I usually use a tsp. Also I find that the riper the bananas(good and black)the easier it is for the cake to cook.

Funny that you should ask...I was just talking to a friend about this same topic. I froze half dozen or so ripe bananas about two weeks ago. You need'nt change a thing from your favorite banana bread recipe. Just make sure that the bananas are completely thawed before starting. The bread will be the same delicious bread you made before. Yes, but there are several topics on the gardening forum....food, talking, games.....oh yea, and gardening/plants. the reason I had so many questions about the bannana bread is I had never made it before. I just hate to waste anything so when my bananas got way on the ripe side I just stuck them in the freezer to make ban. bread some other time. btw, welcome to the forum!

i make banana bread with frozen bananas pretty often when i'm baking. the bananas are the same, they just mash a little easier after they are thawed. in fact, i put all near death bananas in the freezer to avoid waste. one bit of advice though, i peel mine first, i hate the way the peeling feels after freezing
good hint on the banana peels Jiffy. I love banana bread but my banana's never survive long enough to get to the bread. I eat them all up first lol. Love bananas.
