This is my favorite pickle recipe and it's easy as well.
3 cups chopped or sliced onions
3 pounds thinly sliced cukes(I use the small cukes)
2 medium green
peppers, sliced
1 red
pepper, sliced
Mix all, and sprinkle with 1/3 cup salt and let sit overnight.
Next morning, rinse well and drain.
Now make your brine:
4 cups white vinegar
4 cups white sugar
2 tsp tumeric
2 tsp mustard
seed1 tsp celery
seedBoil your brine for a few minutes then add to your drained cuke mix and boil for 5 minutes. Fill your sterilized jars and seal up.
