Merme, are you here? I am looking for baking recipes using lemon. My daughter (age 11) and I made lemon-basil shortbread last spring (Sunset magazine) that was wonderful! We're tired of lemon bars and want to try something new. Please share your lemon recipes (we're mainly interested in desserts, but we're open to anything!) Thanks.

Well, I'm not Merme, but I've got a GREAT recipe for you! These are absolutely fab! I make them as mini muffins to go with my cereal in the morning. I usually add a tad bit more of the lemon extract because I LOVE the lemon taste with the poppy seeds!!! Hope you like this recipe as much as me and my family!

Ingredients:

* 2 cups all-purpose flour
* 3/4 cup sugar
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1 cup (8 ounces) sour cream
* 1/2 cup vegetable oil
* 2 eggs
* 2 tablespoons poppy seeds
* 2 tablespoons milk
* 1/2 teaspoon vanilla extract
* 1/2 teaspoon lemon extract
Directions:
In a large bowl, combine flour, sugar, baking powder, baking soda and salt; set aside. Combine remaining ingredients; mix well. Stir into dry ingredients just until moistened.
Fill greased or paper-lined mini-muffin cups two-thirds full. Bake at 400° for 12-15 minutes or until a toothpick comes out clean. Cool in pan 10 minutes before removing to a wire rack. Yield: about 3-1/2 dozen.

In the above recipe, you can substitute about a teaspoon of lemon zest for the lemon extract and 2 tablespoons of lemon juice for the milk. It will work the same way and use up some of your lemons.
