This is a healthy recipe for banana bread. You will never know the difference!
Preheat oven to 350 degrees F
2 c. whole wheat pastry flour 1/2 c. apple sauce or butter 2 large over ripe bananas mashed 2 eggs 1 tsp cinnamon 1 tsp nutmeg 1 1/2 tsp vanilla 3/4 brown sugar (exclude if you're using apple sauce with sugar added or even exclude all together to let the natural sugar in the fruit shine) 1 tsp baking soda 1/4 tsp salt Nut is you wish
Cream together apple sauce and sugar (if using). Add in eggs, vanilla and spices. Mix well. Add flour, salt, nuts and baking soda. Mix well. Put mixture in well oiled 9x5 loaf pan. Bake for about 60 minutes. For small loaves, divide mixture in two and use two pans with a shorter baking time.

That would go good with a glass of Sherry I bet. Whenever I would go to visit my grandmother, when I was in my early 20's she would take me around to all of her friends' houses where we would discuss books, eat banana bread, and drink glasses of Sherry. These visits are among my fondest of memories.
Kingdoms RAGE and go to war...but the PEasants plant potatoes.. EARTH FIRST! (we'll strip-mine the OTHER planets later.)
