* 1 cup peanut butter * 1 cup sugar * 1 large egg * 2 teaspoons baking soda
Directions
1.First put the peanut butter in a bowl. 2.Then add the sugar, egg and baking soda. 3.Mix until there is no sign of sugar or baking soda. 4.Roll up in to a little ball a little bit smaller than a ping pong. 5.With a fork, press cookies down criss-cross fashion. 6.Preheat oven to 350°, then let cook for 10 minutes or until the bottoms get light brown.
I know this sounds crazy. But it works. They come out soft, puffy, good. But I like to use parchment paper for cooking on.

Great for gluten free diets too. You would think it would melt to a glob on the baking sheet but it doesn't? You can even leave out the baking soda if you don't have any on hand. It still works but I like the added little puffy, airiness it gives.

Somewhere, I have a book written by home ec teachers (compiled) and have this recipe in it. As well as a few other gluten free dishes. But I have not been able to find the book lately. But I found that recipe while checking out a recipe site and knew it was the same or close to the one in my book.
