This is a recipe I learned from Pillsbury which I have adjusted to suit myself. You can dress it up any way you please & I think you will like it.
Ingredients:
Pillsbury Grands biscuits
Cheddar Cheese, shredded
Cooked bacon
Eggs
Salsa OR diced green chili
peppers, cilantro & lime juice
cooking spray
You need either those individual baking dishes (ramekins) OR you can use loaf pans as I do.
In either case, you spray the dishes or pans with cooking spray. Place the cooked bacon along the sides of the loaf pans or around the inside of the dishes, leaving the bottom free. Place a Grands in each of the baking dishes OR 3 Grands along the bottom of the loaf pan.
Dab on the Salsa OR your mixture of green chili
peppers, cilantro & lime juice.
Sprinkle with some of the grated cheese.
Add one egg to each dish OR three eggs to the loaf pan
sprinkle with more cheese.
Bake for 25 minutes in a 375 degree oven.
The Grands in the loaf pans break apart easily into individual servings. It is really quite yummy!
The thing about this recipe is you could adjust it to your heart's content. You could add finely chopped onions & mushrooms, for instance. You could use cooked ground up sausage or strips of ham instead of bacon....
