I thought y'all might enjoy seeing this old post again. I dug it up from several years ago after Maxi & I had quite an adventure trying to make Francine's candy.


Oh Dear GOD, the Candy!

Ay,yi,yi,yi!

I decided to try AGAIN to make Francine's potato Candy. She said she'd send us some so I could see it first before another attempt, but no....I had to go and try all by myself again.

Some people never learn.

Her original recipe calls for ONE potato. It looked awfully small in the pot all by itself, so I decided to make it TWO potato. Good thing I didn't go for Three potato, Four!

So we cooked it and mashed it all up and started adding the "1 lb powdered sugar". And adding it and adding it and adding it and adding it. Poor Maxi, who HATES a sticky mess on his hands was gagging with his hand in the bowl squeezing and stirring. Still not getting thick enough to roll.

It didn't start behaving like dough ready to be pie crust until we reached the 4 POUND powdered sugar limit!

Then the darn thing was SO HUGE, we couldn't budge it. It was overflowing the bowl, this massive lump. We pushed. We shoved. No go.

I locked down my wheelchair and stood up to get better leverage. We got it dumped out on the credenza to be "rolled". Yeah right. A cement roller wouldn't have made any difference.

So the kid and I, we POUNDED that thing down. We pounded it and pounded it and punched it a few more times. Got it down to about 1 inch thick into a rectangle 20 x 30 or so.

Can't find any spreaders (my attendants lose my stuff all the time) so the kid gets a butter knife and goes to work spreading the peanut butter but gets a majority of it on the BACK of his hand trying to keep the knife blade flat enough....

So Two potatoes, Four Pounds Powdered Sugar, One Jar Peanut Butter later, we have got us a monster spread before us.

Time to Roll 'er up, Maxi! Yeah, right.

So each of us using BOTH our hands, we lifted one edge (just barely!) and started rolling. And rolling. And rolling.

End result: One GIGANTIC LOG about 8 to 10 inches wide and 4 inches high by an easy 20+ inches long that could barely fit onto my largest cookie sheet....

So we chilled it. Gamely trying to follow ALL the directions. And hauled that thing out of the refrigerator to slice. Anyone got a chain saw?

We hacked off two pieces. Popped them in our mouths and spit them right back out!

So of course by then the floor, the credenza, Maxi, Me, my wheelchair, the entire world was covered in powdered sugar and peanut butter.

I lamented to my sister Nancy what in Heaven's Name do you do with an inedible monster log of candy weighing about 10 tons? She suggested: paper weight? door stop? weapon? add water?

Big help, she.

So early this AM, Maxi hauled it into the woods where it will be feasted upon by the local wildlife who will think manna has fallen from the skies....

So you know I am waiting for Francine's correct version to arrive!

The other heart was given to another for us to find.

I don't think there is a limit on those boxes....I know I've shipped ones that were pretty heavy (books and stuff). lol
