My Brocoli plants are anywhere from 12" to 20" and the stalks are small, about 1" in diameter. There starting to develope heads in the centers which I believe is to early to make large heads. I'm wondering how to prolong this until the stalks/plants are bigger so they will produce larger heads?
Would less water help them grow longer before maturing the heads? Or is it the other way around, being not enough water makes them go to fruit to early?

I'm not a broccoli growth expert, but I think you're o.k. Once the plant has entered the stage where it's forming a head, there's no turning back. But the whole plant will continue to grow along with the head.

Broccoli is a heavy feeder & does like frequent waterings. You may want to top dress the plants with composted cow manure to increase the nitrogen available around the base of the plant. And mulch the plants if you haven't already.

Could you post a photo? There may be broccoli experts who have other thoughts.
