I recently found a potato plant growing in my compost pile. I transplanted it and it seems to be doing fine. The compost is made up from vegetable scraps, eggshells, coffee grinds and contains no meat or fish scraps. Since the plant originated not from seed potatoes, but from a piece of potato in the compost, is this safe to eat?

Welcome to the forum. Congratulations. Besides seed potatoes, the other way to propagate them is to take your desired type and cut it into chunks with at least one eye on each section and plant it. Your potatoes from this plant should be absolutely delicious.
