Last night we had tomato sandwiches with tomatoes out of the garden. May do it again tonight.

he had bought some sliced chicken at the deli and put that on his. He does indeed always have to have meat or he doesn't feel like he's eaten.

Tonight Easy Lettuce wraps
Thinly sliced
tomatoes
cucumbers
red onion
pepper jack cheese
deli smoked turkey
all drizzled with raspberry vinaigrette
rolled up in a crispy lettuce leaf,
with baby gherkin sweet pickles on the sidethumbup

too hot here to cook,, we just wanted something light tonight.
Oh , and a tall glass of iced tea thumbup

Went to the farmer's market. I got baby reds, sweet corn and cucumbers. I think I will make cucumber salad, baby reds, sweet corn and maybe pork tenderloin. Will have to see what meat looks good when I stop at the store. thumbup

Diane, that wrap sounds good - if you make it for me. And Jes you're tenderloin and veges sound great. I'm not cooking. It's too hot and I want to take a nap. Johnny said he thought about making spaghetti but it's too hot for spaghetti.

Jessica, I ate that tuna for lunch and dinner for 2 days. It was great. I mentioned what I was eating to one of my sisters when she called and she said "hmmmm, tuna. Let me see if I have a can. Haven't had it in months." And she did and ate it too.

I ended up not eating last night but I fixed Johnny hot dogs, green beans and a salad.

Tonight I'm having a salad from our garden. He's on his own.

same for me
I took out enchiladas from the deep freezer I made a month ago slow heated them up in the oven.
and later I thawed out a frozen chicken cordon blue baked it and ate it too lol

I love cantaloupe too Cindy!! but all I have in the house is watermelon right now.

Supper tonight was Healthy requests chicken soup & Bugels instead of crackers.--I should have made myself some soup back when I made Emily some---but oh well the bugels made up for it-- lol.

Tonight I am making my famous chicken parmesan, complete with what the kids call "special pasta", and my famous chopped salad. Of course, the only thing that I can eat is the salad so I'll have to figure out something else for me, or maybe I'll just have salad for dinner, probably would be good for getting rid of my quitting smoking fat, lol.

We are having Chicken Cacciatore my way

I have browned chicken, topped it with spaghetti sauce, in a baking dish, covered it and it is baking. I wll serve it with spaghetti/sauce.

We are having salad & hot rolls to go with.

I am hoping there are leftovers for tomorrow night. notme

if not I have BLT's ala` Jessica as a back up. bop

were having 'I forgot to thaw anything, so I'll be transforming leftovers into something new' for supper tonight. lol

I'm taking the baked mushroom chicken from two nights ago, rinsing off the sauce, and probably slicing it into long strips. I'll make rice to go with it, and maybe some cornbread. thumbup

i like to reuse leftovers that way cricket. in fact, did something similar on wed night!

chicken again tonight. why
tonight we had thighs. BUT, I baked them with some spicy brown mustard and garlic salt. WOW! they were a big hit. I bought this spicy brown mustard a while back cause it was on sale for 60 cents. no one has even touched it, so I diluted some in some water and baked it with the chicken.
It tasted even better than it smelled!

I am trying and trying to remember. I have decided that all I had to eat yesterday was Mac Donald's food with Teddy about noon. Not the best nutrition. I will do better today as it is much cooler.

Sorry, forgot I posted here. blush Special pasta is just pasta noodles, any kind works. Once the pasta is cooked you add a stick of butter and just a little bit of spaghetti sauce. Maybe 1/4 of a jar. Stir is all together and add parmesan cheese. It's buttery and not being heavy on sauce gives it it's special taste.

For Aros's birthday dinner tomorrow (his birthday is Tuesday but I have to work) I'm cooking a prime rib roast. We're having my creamy salad, steamed broccoli and carrots, my famous garlic mashed potatoes, and he wants a chocolate cream pie, from fred meyer because he really likes theirs. As for tonight I'm cooking BBQ ribs, baked beans, coleslaw, and corn on the cob. For myself I'm making chicken and artichoke alfredo. I found a gluten, dairy, soy free alfredo sauce that I'm going to try. I hope it's good.

Tonight I'm trying something new. I'm going to try making risotto with some fresh grilled veggies. I bought and eggplant, zuchinni, one each yellow, red, and orange bell pepper. Wish me luck!

Top round steak wrapped in bacon and smothered with stewed tomatoes then roasted at 350 degrees for 45 minutes. Parmesean couscous and green beans.
