This is one of my favorite recipes. I eat it with rice but you can eat it with whatever sounds good to you.
2 green apples, peeled and sliced 1 bag of craisins chopped walnut pieces, about a 1/4 cup or so? 2-4 chicken breasts 2 cups unsweetened apple juice 1/3 cup brown sugar
Preheat oven to 350 degrees. Place chicken in a casserole dish. Arrange apple slices, craisins, and walnuts all over and around the chicken. In a separate container mix the apple juice with the brown sugar. Pour the mixture over the chicken. Bake for 40 minutes, or until chicken is done. I cook chicken to 180 degrees.

I used to make a similar recipe when I was young. Once, I saved leftovers in individual plastic cups. It reminded me of something.... and so my friends and I called it "McChickBerry"! That's still what I think of when I want to make cranberry chicken.  Good stuff whatever you call it! Merme
