Dodge here is how I make homemade chicken nuggets.
You need four small bowls.
Put white flour mixed w/ a pinch of poultry seasoning, salt &
pepper in one.
Put 1 egg & 1/2 tablespoon water or vegetable oil in the second.
Put breadcrumbs in the third bowl.
Leave the last bowl empty. You can also use a plate instead of a bowl here.
Cut up 1 lb chicken breast into bite sized pieces. Dip pieces first in flour w/ spices, shake off excess. Now dip in egg mixture and then quickly into bread crumbs. Place dipped pieces into empty bowl.
Now put the bowl (or plate if you prefer) of coated pieces in the refrigerator for anywhere from 10 minutes to a couple of hours. That will allow them to get crispier and dryer.
To cook: put several (3 or so) tablespoons of quality oil (sunflower is a good choice) in a big frying pan. When the oil is hot, add coated pieces of chicken, being careful not to crowd them too much. Fry until golden brown on one side & flip. When both sides are cooked, remove from pan & place on a plate covered w/ paper towels to remove the extra oil.
Serve hot plain or with your favorite dips!
