I freeze them an make jam as I need it . That way it is fresh .
Cheaper then buying lids an jars.

hey Dodge--sounds to me like you need to send me your recipe. I will be usiong frozen blackberries, but hey--that should not be a problem, right?
That has been my issue. I always made my jelly form fresh berries, so now I am art a loss as to how to proceed with the frozen. isnt there more liquid in the frozen that the fresh?? and if so how does one compensate for that?

I just freeze the berrys without adding any liquid. Take them out of the freezer an put them in a pot an add water. Just enough to cook then nice, Little more to make jam. I dont even measure.. LOL
When the jam slides off the wooden spoon in 2 drops it is done.
Black berrys I only use for pie. I actually hate blackberrys , but pick them for hd.LOL

We have done this with raspberries and with peaches, too. The berries we just freeze in 2-4 cup portions. A few weeks ago I picked some blackberries, but not enough for jam so we just thawed all the raspberries we had left & mad mixed berry jam. Peaches we freeze in larger quantities but then during the winter John will make up small batches of jam as we go along. Saves big time on space, too, since we have a large deep freezer.

Looks good. Our blackberries are sweeter this year than the last few years. Maybe because of all the rain this winter. the blackberried I will be using are a tart larger berry. Black Satin Thornless to be exact. That is the kind I had out at the farm & I gave starts to my BIL & my dad. so now even thought I have moved I still have access to blackberries.--- so I am thinking I would need to add sugar to these, because of past experiences. What do you think,barb??? as it is, I strain my berries in a juice bag before cooking. I force the juice thru at the end which also forces some of the berry skin thru. The result is a jelly that spreads more like say an apple butter. which makes me very happy. and oh I use 3 cups of juice at a time & put it up in jars.

I am confused. You strain before cooking? Why not after?
When I make jelly of jam i use one cup joice one cup sugar?
I never did black berrys like that . Guess I will try..

yes barb--I have a sure-jell recipe. I use it because we are not big preserves people here.
With it, you strain the berries then add the juice & sure jell to the to a pot & bring to a full boil--then you quickly add premeasured sugar and boil 1 minute, stirring constantly. remove from heat & skim off any foam. I then fill my jars quickly, cover quickly with rings & flats & invert jars for say 5 minutes. turn jars upright & leave to cool. Then if they are not properly sealed, and they usually are, I put them in the icebox & use ASAP.
One could use a water bath method, but I say why bother.

Suregel(sp?) works wonders for $1 a package it usually does 12 jars.

12 jars huh?/ wow !! I have been getting 6-7 jars out of a batch. but yes I like it too
but that is 3-1/2 cups of juice & I forget how much sugar...

I picked up some opf the powder today--at a grocery store-- it was $2.53 for the one box. the grocery store is always high--but hey, I was there & it was too.
