Tonight for me I have some gold potatoes, asparagus, and a chicken in the crock pot. For the family I'm cooking up a couple packages of ravioli and making them a caesar salad. Pretty easy dinners tonight.

A big ol cucumber salad cause the gardens got too many of them to eat slowly. With a few jalepeno's thrown in to spice it up a bit

Shani cold cucumber soup is always delicious come summer when the cucumbers come in.



Tonight we are having Flounder fillets w/ lemon slices, orange peel, rosemary, salt & pepper in a butter sauce. We had home grown summer squash, tomatoes, onions & lemon peel sauteed together. We had boiled new Red potatoes. We had DELICIOUS!

Tonight I finely chopped up vegetables from Maxis garden & put them in to steam w/ the rice while it cooked. Then I made a light hamburger gravy to go over top of it. Yummy in the tummy!

Tonight we had fish dinners from the local Church.
People liked their lenten dinners so well that they have dinners 1 friday night a month. This month is was fish next month it will be chicken--- thumbup

I am trying to purchase as little as possible this month and eat out of my pantry and freezer. I need to get rid of the older items and I want to conserve some funds. Chuck roast will make a few meals for us.

Carol if your health status will allow it, you can beat cake batter with a wooden spoon. Just make sure to raise the spoon out of the batter on the up stroke so that you are pulling air down into it on the down beat. You want your cakes light and fluffy and that takes air. 300 beats (up and down is 1) for each minute of electric beater time.

I use that method all the time.


So tonight we are having Beef Stew from leftover pot roast. And just because Maxi loves them so, I tossed in a few handfuls of Rigatoni noodles.

I know I can beat it by hand---sadly I am old enough that I rememebr the boxes saying how many time you had to hand beat a cake if yo udid not h ave a mixer---

But I will let you in on a secret--I do not want to do it by hand---no I do not!!! nono
