This is a very quiet holiday for us this year. Mom has been very ill for a while now, and "is on her way" to quote her cardiologist. I am her primary caretaker, though I live an hour's drive away. It's just so hard ...

I really appreciate your recognizing my holiday. kissie
We did light menorahs tonight, and my husband made yummy potato latkes for dinner. thumbup

Lynne ,, Happy you got to have a quiet celebration ... I know how hard it is to be a caretaker... seems to be our generations lot .. kids, grands and parents... and we are in the middle...
Take care and rest when you can... only and best advice I can give you...

Thanks so much, nana! We certainly are the "sandwich generation". We definitely were not prepared for this, as mom has several severe illnesses that none of us have had experiene with before, and she was always a very active and social person. Doing the best we can, and loving any support we can get. :ding:

here is one recipe Barb:

potato LATKES

1 Egg
3 TB chopped chives (I think you could use green onion tops)
2 TB Matzo or All purpose flour
2 TB grated onion
1 TB lemon Juice
3/4 tsp salt
1/4 tsp pepper
2 & 1/2 pounds baking potato (any starchy potato)
1/2 cup Olive Oil

peel & shred potaotes.
Drain potaotes in colendar lined with paper towel. squeeze out liquid. Set aside. Mix together all other ingredients. Add drained potatoes to egg mixture.. Mix well.
In a non-stick skillet, heat up 3 TB of the oil. Drop 1/4 scant cup potato mixture into oil in pan. Flatten into 3 inch rounds. Cook 8-10 minutes on one side or intil golden. Turn & cook on other side. cook until that side is golden brown. Remove with a slotted spoon. Drain.
Serve with sour cream and applesauce.

Note: Stir mix before making each batch--add new oil with each batch also.

Dodge - they are also called potato pancakes, but we call them latkes.

Did you ever eat the pizza made with potatoes on top ? Tasted like our haluski?

I want potato pizza recipe like that..
Also want the
Perogi made with the potato filling.. Has a tangy taste I love.
Anyone know???

Dodge - we do not use flour to bind the potato pancakes - we use matzoh meal, which is just matzoh ground up finely.
