We'll have to search them up for you. We had a few topics last fall filled with pickling recipes.

I don't really have a recipe for salsa. but I can give you a list of things that I add. first off, I'll say the more fresh ingredients you use the better. especially the tomatoes! home grown if you have them! I tried to list the ingredients in order of importance, to me.

tomatoes - more tomatoes than any other ingredient
cilantro
peppers - any combo. bell, jalepeno, bannana...ect.
garlic
lime juice
onion
salt
pepper
just a bit of tomato paste to thicken.

sometimes I use just a dash of bbq sauce. sometimes a wee-bit of italian dressing.

I throw it all in the blender. If i'm feeling extra ambitious I'll chop some of the ingredients, so it's a bit chunky. a food procesor would work much better, but I don't have one.

like how to make tortilla chips, or casseroles with tortilla chips in them?

I got this recipe for Cranberry Salsa from our member Vanessa/4Ruddy years ago. Now I make it every fall and my friends/family can't get enough of it! They tell me they sneak a spoon into the fridge just to get a bite between meals and add it to all kinds of foods. It is also very easy to make and looks beautiful in the jars.... perfect for gifts!

Ingredients:

3 cups fresh cranberries
1/2 purple onion
2 jalepeno peppers
1/2 cup fresh cilantro
1/2 cup honey
2 Tablespoons fresh lime juice
1 Tablespoon orange zest
(Optional 1 clove garlic)

Directions:

Prepare your jars. Wash the cranberries and peppers. If you do not like very hot salsa, be careful to remove as many of the jalepeno seeds as you can.

Then, simply put everything in a food processor and pulse 6 to 8 times until all the ingredients are coarsely chopped. Jar up and chill for 8 hours.
