It's an old recipe from DH's Czech grandparents (adapted for modern times). Briefly... (details if you want them)
MAKE SURE EVERYTHING IS STERILE!
2 cans frozen fruit concentrate (or the equivalent of bottled concentrate or 100% real juice from crushed juice)
1 pkg wine yeast
3 cups sugar or honey (for mead)
1/2 tsp pectinase
1 gal. distilled water
punch ball balloon (sold at Dollar General)
duct tape
combine concentrate & pectinase in glass bowl. cover let sit 1 hour
still in sugar & yeast
pour into glass gallon jug
fill to about 1" of the top with distilled water
cover with balloon & seal in place with duct tape
store in dark-ish room or closet at about 70 degrees for 5-6 weeks. (The balloon fills with CO2!!)
"first filter" using the Vinebrite system (nothing more than a little filter & syphon hose;

store in fridge for 1-2 weeks.
"second filter"
"age" (haha) in fridge for 1-2 weeks.

We've been doing this for a couple of years. Takes about 1-1 1/2 hours each Saturday morning to make 1 gallon, first filter 1 gallon, 2nd filter 1 gallon.
