6 cups any fruit
6 cups sugar
empty gallon glass jar

Put 6 cups fruit in jar, then add sugar.
Fill the rest of the jar with water.
Stir till all sugar is disolved.
Put on lid.
Stir once a day for 30 days.
Strain out fruit.
Pour into bottles,add tops/corks/lids. Enjoy!

I have a friend who does this with a pint jar, 2 cups of fresh grapes (from the yard not the store) I think a cup of sugar and boiling water to fill-----then she put a new flat on the jar---a ring, & tightly closes the lid & puts the jar in the ice box---I do not rememebr how long she lets it set---but she says it is the best grape juice she has ever had.

This wine has to be stired each day. It is not good wine if you short the sugar.
You can half it and make it in a half gallon jar.
The most important thing is match the sugar to the fruit in equal amounts. That is what is causing the fermentation.
Chilling it kills the process. That is how I stop it. I jar it up and put in fridge for a day.

I have, apple, mixed fruit, blackberry, and clover wines going on top of the fridge right now. Next month I will bottle them and put them back for Christmas.

We do wine too, a little differently, though. But one thing we are super cautious about it sterilizing everything involved. Pouring boiling water over stuff in the sink does the trick.

how do you do it? i'm thinking of trying it with the blackberries in my yard this year.

It's an old recipe from DH's Czech grandparents (adapted for modern times). Briefly... (details if you want them)

MAKE SURE EVERYTHING IS STERILE!

2 cans frozen fruit concentrate (or the equivalent of bottled concentrate or 100% real juice from crushed juice)
1 pkg wine yeast
3 cups sugar or honey (for mead)
1/2 tsp pectinase
1 gal. distilled water
punch ball balloon (sold at Dollar General)
duct tape

combine concentrate & pectinase in glass bowl. cover let sit 1 hour
still in sugar & yeast
pour into glass gallon jug
fill to about 1" of the top with distilled water
cover with balloon & seal in place with duct tape

store in dark-ish room or closet at about 70 degrees for 5-6 weeks. (The balloon fills with CO2!!)

"first filter" using the Vinebrite system (nothing more than a little filter & syphon hose; http://www.midwestsupplies.com/products/ProdByID.aspx?ProdID=4252) into another gallon jug

store in fridge for 1-2 weeks.

"second filter"

"age" (haha) in fridge for 1-2 weeks.

drink.

We've been doing this for a couple of years. Takes about 1-1 1/2 hours each Saturday morning to make 1 gallon, first filter 1 gallon, 2nd filter 1 gallon.

Details if you want them! It's tastey and not at all a sweet fruit wine.
