Should cuttings be made directly on a node or a "pinch" next to it? Should a node be put submerged into water for rooting? I had a few leaves trying to grow underwater once from a node.Of course they didn't make it. Confused on where exactly to make my cut crit

do it a lil bit below the node, so that way the section will realize "hey, i'm separated from the main body" and not go "dangit, i'm cut off at the torso... this sucks... i can't do anything!"

But ya, i think it'll grow as long as you got a stem with leaves on it, or a jade leave.

Not only do leaves grow from the nodes, but so do the roots. A node has to be under water or in contact wth moist soil for roots to develop.
