Recipe as promised for steak and kidney pudding.

Suet crust.
8oz flour.
4oz shredded suet.
seasoning.
water to mix.
filling.
1 lb stewing steak.
2-3 lambs kidneys or 4oz of ox kidney.
1/2 oz flour.
seasoning. water or stock.
1. to make the suet crust mix all the dry ingredients together and add enough water to make a firm dough.
2. Line a greased proof basin with most of the pastry, keeping enough for the cover.
3. cut the meat into small pieces.
4.skin core and and chop the kidneys.
5.Mix the meats well together and put into the lined basin..
6.add enough water or stock to fill the basin.
7.Put on the pastry lid damp well and seal together.
8.Cover with greasproofed paper and cloth, or a cloth dipped in boiling waterand floured. Leave room for the pastry to rise.
9. Steam for a minimum of 4hrs. Serve with fresh vegetables.

Variation, add finely chopped onios, or mushrooms.

Enjoy an English dish.

The recipe for the crust....

Would that be what we call pastry crust....

And like for a "Pot Pie" here in the USA????

wEEZIE, we call it suet crust pastry, its a pastry that is steamed rather than baked, think your pot pie may be the same. Do you steam a pot pie?

Steaming. You place covered dish We call it a pudding basin into large saucepan, fill with water up to halfway to your dish. Place lid on top. Simmer for this particular recipe for about 4hrs, check water every half hour. If water is low top it up with hot water to half way again, never let the water run dry.
